Cinnamon-this is an inevitable ingredient in Indian spicy cooking be it pulao,rice varieties,gravies etc., you need cinnamon.This recipe is a little different one which I scribbled hurriedly from a T.V show as it was a simple one which also goes to Sunita's THINK SPICE-THINK CINNAMON

Flour-2 cups
Baking powder-2tsp
Sugar-11/2 cups powdered
Vegetable oil-1 cup
Cinnamon powder-11/2 tsp

Mix the flour with baking powder and cinnamon powder
Beat the eggs till light and fluffy
Mix the eggs,sugar and oil till they blend well and the mixture is light and smooth
Slowly mix in the flour to obtain a smooth dough
Lightly grease the muffin cups and fill it till half with the batter
Bake in a preheated oven at 150 C FOR 15 TO 20 min till the muffin is light brown on top.
Insert a toothpick or skewer in the middle,if it comes out clean then the muffins are done
Cool them and decorate with icing of your choice

I hope this is a easy one to make and a different one too

My daughter and I love to make fresh muffins for breakfast! Plus you can never go wrong with cinnamon.
