Inji puli as it is called in Tamil is a mouth-watering combination for Thayir Sadam (curd rice) here.
Ingredients
Mango ginger(Ma inji-100gm
Tamarind-a lime size
Green chilly-5 chopped finely
Jaggery powder-1tsp
Salt-as required
For Seasoning
Oil-4tbsp
Mustard seeds-1/2tsp
Urad dal-1tsp
Chana dal-1tsp
Asafoetida-1/2tsp
Method
Make a thick paste of tamarind with 1 glass of water
Wash,peel and cut the ginger into thin rounds
In a kadai heat oil and season withthe ingredients
Add the ginger,green chillies and saute well
To this add the tamarind paste and salt
Allow to boil till it thickens
Add the jaggery powder and remove once oil seperates
Store in a clean dry container as done for pickles
