No one can deny the fact that potato is all time favourite whether be it an adult or a child.You make anything out of it the dish will be empty.Try this healthy potato curry with the nutritious greeny leaves which otherwise the children will pick off their plates
Ingredients
Potatoes-3 large boiled and peeled
Green chilly-4 chopped
Garlic-1tsp grated
Ginger-1tsp grated
Coriander leaves-1/4 cup finely chopped
Curry leaves-8-10 finely chopped
Mint leaves-3tsp finely chopped
Asafoetida-3 pinch
Turmeric powder-1/2tsp
Lemon juice-2tsp
Cumin seeds-1/2tsp
Mustard seeds-1/2tsp
Oil-2tbsp
Salt-to taste
Method
Chop potatoes into medium sized cubes
Heat oil in kadai and season in cumin,mustard seeds and asafoetida
Add ginger,garlic and chillies and stir-fry
Add mint and curry leaves and stir
Next add potatoes and cook for a while,then add turmeric powder,lemon juice and stir well
Cook for 5 min till oil separates and add coriander and stir gently
Serve hot with any roti variety,puris and bread too
