BHINDI BHINDI........

"VENDAKKAI" as is called in Tamil is a very common vegetable in our kitchens and one of the few vegetables our children like these days.I remember we eating it raw before maths exams to do the problems well,don't know how far it is true.We usually make Bhindi as fry,Bhindi masala etc, try these too

CHILLI BHINDI
Ingredients
Bhindis-10-12
Garlic-1tsp chopped
Ginger-1tsp chopped
Green chillies-5
Capsicum-1
Soyasauce-1tbsp
Cornflour-1tbsp
Vinegar-2tsp
Ajinomoto-a pinch
Spring onions greens-2 stalks
Oil-3tsp
Oil for frying
salt to taste
sugar-a pinch
Spring onion green for garnish

Method
Cut the ends of the bhindis and slice into two
Make a thin batter of half cornflour,salt to taste.1tsp soyasauce
Dip the bhindis in the batter and deep fry till light golden brown and drain
Slice the green chillies and capsicum and de-seed them
Heat 3 tsp oil in a pan add chopped ginger and garlic and fry for a minute
Add green chlli and capsicum and fry for a minute
Add soya sauce and stir fry for 2 min
Now add 2 cups of water,salt and sugar,ajinomoto and bring to boil
Add the fried bhindi and cook for a minute,then add the remaining cornflour mixed in little water to the gravy and let it thicken
Add vinegar,garnish with the chopped spring onions and serve hot with fried rice
I think we can try with red and yellow capsicums as well,I've not tried as we don't get it here

BHINDI RAITA
Ingredients
Bhindis-5-6 cut and fried
Curd-1cup
Chilli powder-1/4tsp
Roasted cumin powder-1/4tsp
Coriander leaves-1tsp
Salt and sugar to taste
Coriander leaves chopped for garnish

Method
Beat the curd well till smooth
Add the other ingredients and mix
Now add the bhidis
Garnish with coriander leaves and serve chilled

MINT BHINDI
Ingredients
Bhindi-200gms cut to two and fried
Coriander leaves-1 bunch
Mint leaves-1/2 bunch
Onion-1 sliced
Curd-1/2cup
Garlic-5 flakes
Ginger-1/2"piece
Cumin seeds-1/2tsp
Turmeric powder-1/4tsp
Green chilli-3
Oil-3tsp
Salt to taste

Method
Grind together all the ingredients expect turmeric powder and oil
Heat oil in kadai and fry the turmeric powder and the ground paste till raw smell goes
Add the bhindis salt and a pinch of sugar and cook till done
Serve hot with rotis or puris
