RICE KANJI

Usually kanji/porridge is considered to be had only when you are sick and many of us just don't like to have such a bland food. But this version of kanji can be had as a full meal and it is easy to prepare too.We prepare this as neivediyam too during the Tamil month Aadi for Goddess Amman and also for Chitra Pournami which was yesterday.

Ingredients
Raw rice-1/2 cup
Yellow moong dal-1tbsp
Grated coconut-1/4 cup
Small onions-1/4 cup chopped finely
Butter milk-1 cup/as required
Coriander leaves-to garnish
Water-2 to 3 cups
Salt-to taste

Method
Dry roast the dal slightly
Grind the dal and rice coarsely, just a spin or two
Boil water in the cooker
Add the ground rice and pressure cook till done
Meanwhile keep the other ingredients ready
When cooked add grated coconut, finely chopped onions, butter milk, salt and coriander leaves
Can be served semi-thick or watery by adjusting the quantity of buttermilk
Serve chilled

This is an easy to make recipe for this summer and also my entry for EC's WYF-Quick Meal Event
