BAKED VEGETABLES

Dinner time is always confusing as each would want one dish and by the time I convince them it would be well past the dinner time.Though both my children finished with a glass of milk yesterday I was confused on what to make and husband dear wanted baked veggies.I heaved a relief and combined all the weekend leftovers and it made a perfect dinner

Ingredients
Bread crumbs-1 cup
Carrots-2
Beans-8
Cauliflower-a few florettes
Peas-1 cup
Butter beans-1/4 cup
Onions-1 sliced
Capsicum-1
Baby corn-3
Lettuce-few
Salt-as required
Cheese-as required

For seasoning
Mixed herbs-2tsps
Pepper powder-as required

For white sauce
Butter-2tbsp
Maida-3tsp
Milk-1cup/as required
Salt-to taste
Pepper powder-as required



Method
Steam all the vegetables except onions and lettuce till half done and keep aside
In a non-stick pan melt the butter and add the maida and roast it without lumps
To this slowly add the milk and stir simultaneously so that lumps are not form
If the paste is too thick add some more milk to get a smooth semi thick consistency
Add salt and pepper and mix
Combine the steamed veggies to the sauce,along with the herbs,salt and pepper
In the greased pan spread the bread crumbs and on it the mixed vegetables
Place the sliced onions and lettuce on the top and decorate with the grated cheese
Bake in a preheated oven at 175 C till the cheese melts or 10 min


I think we could pamper our taste buds with the cheese once in a while
