Brinjal is a very popular veggie in Tamilnadu and once considered the cheapest which is available throughout the year.But today is priced along with any high priced one.Very few like preparation with brinjal which mainly used in sambar,gosthu,avial and curries.I like this vegetable right from the trational sambar to Bhaigan ka bartha.This dish popularly known as Ennai Kathirikai Kuzhambu is my grandmother's recipe which I make once in 10 days and my daughter's favourite too.
Ingredients
Small sized brinjals-6 nos
Small onions-10 nos
Garlic-10
Tamarind extract-1 cup (thick)
Salt-to taste
Turmeric powder-1 tsp
Chilli/sambar powder-1 tsp
To season
Mustard-1 tsp
Methi-1tsp
Curry leaves-few for seasoning
Asafoetida-for seasoning
Oil-4 tbsp
To roast and grind
Red chilli-4 nos
Coriander seeds-4 tsp
Khus khus-2 tsp
Coconut grating-5tsp
Method
Slit the brinjals on the top without taking off the stalk fully as in the picture and check for any insects
Heat oil in a heavy bottomed vessel and season with the ingredients
Add the onions,garlic and brinjal and saute
Include turmeric and chilli powder and saute
Add the tamarind extract,salt and water as required and allow to boil till the brinjals are half cooked
Simmer and add the ground masala and mix well and allow to boil till thick
Serve hot with rice and ghee
