As I had missed all the events for the past two months in the blogosphere I wanted to participate as many event possible.EC'S Mixed Rice Varieties Event is my first one.
Plain pulao is done by many of us according to our tastes.This one is my aunt's recipe which she made when I visited her this vacation.She's a great cook and many of her dishes goes into my children's lunch box without fail.As soon as the school re-opened I had to prepare this pulao for my children as a new menu for this year.
Ingredients
Raw rice/Basmati rice-2 cups
Onions-2 finely sliced
Green chilly-4 slit
Ginger-garlic paste-2tsp
Thick Coconut milk-1cup
Water-3cups
Salt-as required
For seasoning
Cinnamon,cloves-2 each
Bay leaf-1
Cashews-a few
Oil/ghee-as required
Method
Wash and soak rice for 10 min
Heat oil in pressure cooker and season with the ingredients
Add onions,chilly,ginger-garlic paste and saute till onions are saute
Add the rice and saute for 2 min and add salt
Combine coconut milk and water and pour into the sauted rice
Close the cooker and pressure cook for 15 min
Serve hot with any gravy,raita or tomato sauce
Best with MIXED VEGETABLE GRAVY
Variation
Add a cup of mixed vegetables while sauting onions and convert it to vegetable pulao
