Thengai pal kuzhambu as is known in Tamilnadu is an excellent accompaniment with rice.This recipe is my hubby's grandmom's version and the taste too is yummy.Though it takes some time to prepare it is worth doing it.
Ingredients
Coconut-1
Mixed vegetables carrot,
beans,brinjal,potato,tomato-1 cup
Tamarind extract-1/4 cup
Jaggery-a small piece
Oil-as required
To grind
Toor dal-1tsp
Chana dal-1tsp
Split urad dal-1tsp
Red chilly-6
Coriander seeds-1tsp
Khus-khus-4tsp
To season
Cinnamon-1
Clove-2
Cardamon-2
Bay leaf-1
Asafoeida-a pinch
Turmeric powder-1/2 tsp
Salt-as required
Method
Grate the coconut and extract milk thrice
Roast the ingredients to grind in little oil and grind to paste
With oil season the ingredients add all the veggies and saute well
When half done add the tamarind extract,salt and jaggery
Then add the masala paste to it
Add the third milk after 10 min
Then add the second milk and boil for 5 min
Finally add the first milk and remove immediately once it just starts to boil otherwise it would curdle
This stew tastes best with rice and Potato curry
